Black Bean and Mango Salad Jars

Howdy, Utahns!!!  I’m home for a couple weeks and enjoying being around so many Saints.   I grew up in Kaysville, Utah and love this sweet little town.  It has such a quaint feel and although it changes every time I visit it still maintains its charm.  I have to be honest, I was nervous that as soon as I stepped foot on Utah soil, I was sure it would start snowing.  I know, I know, some people just adore the snow but after living in Texas for 4 plus years, I don’t share those sentiments. I’m a flip flops and rain sort of a person. 

We have such a fun family visit planned.  The baptism of my second daughter, bridal shower for my little sister, time with my Grandparents, Aunties, parents and all my amazing friends.  How do I fit it all into 2 weeks? I have no idea!

Speaking of bridal shower, do you think I could get away with making this scrumptious delight from OUR BEST BITES? I think so!!  I’m getting so stinking excited for summer salads!  Eeeek!  This one looks heavenly!  Head on over to their blog and check it out!
