Okay, so this is absolutely TO. DIE. FOR! This is one of those dishes that you cook it, portion it and put it away.  It has great ingredients but even too much of a good thing is too much.  I hope you love it as much as I do!

Ingredients
  1. 1 Cup Dry Brown Rice
  2. 2+ Cups Water
  3. 1/2 Cup Light Coconut Milk (canned)
  4. 1/2 Cup Unsweetened Coconut Chips
  5. 1/4 Cup Maple Syrup
  6. 1/4 Cup Sliced Almonds
  7. 1/4 Cup Chopped Dates
  8. 1/2 Teaspoon Cinnamon
Instructions
  1. Cook brown rice in water according to package directions.
  2. Once the rice is finished cooking; add the coconut milk, coconut chips, maple syrup, almonds, dates, and cinnamon.
  3. Stir and cook over medium/low heat until the coconut milk begins to absorb and the mixture thickens. (about 5 minutes)
  4. Serve warm. Top with additional coconut chips, dates and almonds.
  5. This can also be pre-made and served cold.
