Mango Pinapple Salsa

I’ve been making lists of all of my favorite healthy food and this is close to the top. I eat it plain or on tacos or with homemade baked chips.

Pineapple Mango Red Pepper Salsa

Ingredients
  1. 1 large mango (ripe), peeled, flesh cut from pit into 1/4-inch dice
  2. 1/2 cup fresh pineapple
  3. 1/2 large red bell pepper, cored, seeded, and cut into 1/4-inch dice
  4. 2 tablespoons red onion or shallot, minced
  5. 2-3 tablespoons lime juice, from 1 to 2 limes
  6. 2 tablespoons chopped fresh cilantro leaves
  7. Table salt
  8. Cayenne pepper
Instructions

In medium bowl, toss together mango, red bell pepper, shallot, 2 tablespoons lime juice, cilantro, 1/2 teaspoon salt, and 1/8 teaspoon cayenne; let stand at room temperature to blend flavors, 15 to 30 minutes. Adjust seasoning with additional lime juice, salt, and cayenne; stir in pepitas and serve.
