Roasted Delicata Squash

I ate lunch the other day at Whole Foods.  If I’m feeling especially lazy but want to eat some prepared, yummy veggies, that’s where I’ll go.  I was thrilled when I found some squash!  I’d never seen this squash before and I absolutely fell in love!  I thought about it the next day and had to get some more! To my dismay, they hadn’t made any. I decided to ask the gentleman in the produce department if he knew what it was.  I described to him what it was like.  I said, visually, a cross between a zucchini, yellow neck and english cucumber but inside, almost like spaghetti squash, just not so noodley.  In my head I sounded like a complete idiot but luckily for me, he knew exactly what I was talking about.  The unfortunate part of the story is that the kitchen had cooked the only case they had. I was super bummed! I REALLY wanted more.

I still had some errands to run and Trader Joes was on my list.  What to my surprise?!?  An entire two boxes of Delicata Squash.  YAY!!!  I was thrilled! I’m sure others could tell because I was loading my cart up hastily.  The glorious part about Delicata Squash is it lasts for up to 6 weeks.  This isn’t as long as other winter squash but 6 weeks is a decent shelf life.  It is a good source of dietary fiber and potassium, as well as small amounts of vitamins C and B, Magnesium and Manganese. BONUS!
