Veggie Fajitas

The Word of Wisdom says to “EAT MEAT SPARINGLY” I know it’s tough to think about eating fajitas without meat but these are SUPER yummy!  Just give it a try.  You’ve got to start somewhere. 🙂

Whole Wheat Veggie Fajitas

A substitution for steak and chicken fajitas.

Ingredients
  1. 1-16 oz container of mushrooms cleaned and cut
  2. 3 bell peppers, I like to use a yellow, green and red sliced.
  3. 1 sweet onion diced
  4. 1 package of fajita mix
  5. 2 Tablespoons Olive Oil
  6. Whole Wheat Tortillas
Optional
  1. Sour Cream
  2. Guacamole
  3. Pico de Gallo-salsa
  4. Hot Sauce
Instructions
  1. In large saute pan, heat 1 tablespoon of olive oil on medium. Saute mushrooms until browned. Put in a bowl, set aside. Add second tablespoon of olive oil on medium and saute onions until browned. Add bell peppers and cook till softened. Add mushrooms back in. Sprinkle fajita seasoning over entire mixture and following instructions on packet. Stir until the sauce is at the desired thickness.
  2. Spoon onto a whole wheat tortilla. Add optional toppings.
